The Pinecone Story

Pinecone Bakeshop is a small neighborhood bakery specializing in seasonal fruit tarts and cakes made with local produce, heritage grains, and sustainable ingredients. Founded by Joyce Hsieh, a Taiwan-born, LA-based baker, it’s a tribute to her late grandfather, whose name means “pine tree” in Mandarin and who shared her love of working with flour. Inspired by the symbolism of the pinecone — a vessel of growth, resilience, and abundance — our mission is simple: bake with integrity, celebrate the seasons, and nourish our community, one tart at a time.
